Never fail miso making

One of best thing ever done and doing for my health and cooking is making own miso paste. It is simple to make and never fail. Mould on miso during the process. This is a sign of success. Good Bactria is also working well. Just scrape the mould area and clean the container. Make the paste upside down. Press the pase to push air out by hands and a weight. Keep the container in room tenperature for further fermentation. Some paste is separated in small container to keep in the fridge to consume.

My favorate salad for lunch and dinner

 Of course it is a low carbo at home for lunch and dinner. There are green leaves, cucumber, avocado, cheese, walnut and onion dressing in the bowl. I had it with chicken burgers of lots of shallot and ginger today.

Low carbo treats - red wine etc.

I can have "red wine" as low carbo diet. I often have cheese with Nori (dried sea weed) with red wine or black coffee.

Home made miso paste is coming OK.

I set up my miso last March, almost 4 months ago. I checked, scraped mould area, made up side down and put back again into container to leave for another month or so. Everything goes well as planed.

I tasted and used in my miso soup tonight. It was good.

Pickles

Today is my day off. But I spent this morning to make these pickles. It seems very easy to make but I never done before. We can start eating them from tomorrow. Now I will put my feet up.

Home made miso paste set up

I have sat up homemade miso paste (made from fermented soy beans) recently.  It will be ready in 3 ~ 6months. This is my first time. I cross my fingers for the success.
Japanese food is very popular in Australia & world and some people know miso soup and miso paste. This is one of most important Japanese ingredients and very good for health. Commercially made miso is widely available but  it was made at home traditionally. So I tried to make by myself.

Freeze cooked rice

I cook 10 cups rice ( maximum of cooker ), wrap them in bowl size and keep in the freezer. Put in microwave oven for a minute and longer as watching when you eat.

Freeze leftover egg whites

I always have many leftover egg whites in my fridge and I am still looking for a good way to use. Meantime I decided to freeze them. When separating eggs, I just put the whites in the ice cube tray. After they are frozen, pop them out and transfer them to a zip-top freezer bag.

Bread making adventure

 Since I bought my bread-maker last weekend, I've been making bread everyday. It is fun and gives me a bit of happiness every time. I made Chocolate and Walnuts Bread, Curry and Onion Loaf, White Loaf,  Oatmeal Pecan Raisin Bread and Brioche so far.

 I had one big failure when I tried to make an Oatmeal Breakfast Bread first time. I realised later I forgotten to put a kneading blade. One little thing makes a big difference. I never forget after that experience. I tried with the blade again and it comes out beautifully.

 Now I can say I can't believe people buy bread from shops. It is so easy to make beautiful bread at home.

Fruit sandwich

Many years ago I had a beautiful and tasteful fruit sandwich at a fruit parlor in Ginza, Tokyo. My fruit sandwich is not beautiful as that one, but taste is OK. My family enjoyed. It is a good alternative sweet instead cakes too heavy or too sweet.

My new chopping boards

I think this is one of best things I bought. I was looking for another small workbench to put a chopping board. The space near the sink was too small to put a normal size board.  This chopping board solved my problem. It fits on the sink and can be hung to dry. Very easy to clean. I love it.  I bought a large one as well.

Trifle

This is a bowl of TRIFLE from a left over sponge cake. This is an instant one to eat tonight. I will make another one which will leave a few hours to soak. Normally presentations of trifle are messy and yukky. But they taste good.

Kasutera - Japanese style sponge cake



It is a sponge cake, but it is moist and more taste than normal sponge cake. It was evolved in Japan.
I tried to make one today. It came out well.

Presentation of the cake

First I tried a chocolate topping to draw on the plate but the taste did not work with this cake. So I used icing sugar and apricot jam on the plate. It may be good with vanilla ice cream.

Butter Cake with Apple


Looks good and taste good. This butter cake is mixed with fresh vanilla bean seeds and lemon rind and sandwiched apple in the middle. Apricot jam and sugar are on top.

Fruit cake with Rum raisin and Orange peel

Since I started making my chocolate in my chocolate kitchen at the gallery/cafe. I did not do much any other cooking. I was so busy with glass and chocolate. I feel a bit guilty about it. So I made biscotti and fruit cake today. This fruit cake is moist and tasty.
